Abstract

This contribution will analyze some of the many textual sources that, from the third century BC, up to the present day, have witnessed the connections that link rice to the theme of health. A long history unfolds through medicine, gastronomy, folklore and literature showing radical changes in the methods of use and in the representation of rice.
