In this paper I will try to analyze the way in which food within the patrimonialization processes of material and immaterial assets is intimately connected to the locality and to the dynamics of re-territorialized of the localities on a global scale. The patrimonialization of cultural heritage, among these gastronomic ones, even when it involves specific communities is never a territorially limited phenomenon, as it puts in place cultural, institutional, legislative and economic references of the national and international type (National Institutions, UNESCO, EU etc.), capable of projecting communities in global scenarios. In this sense, the boundaries of the Foodscape on the one hand are structured, and in turn stratify, a flexible and mobile plurality of family, regional, national and global references, on the other hand they stage a local/global dynamic that moves long The delicate ridge of constraints and creativity.Downloads
